A Healthier Coleslaw

Summer in Saratoga Springs is the perfect time to gather with friends and family for a picnic or outdoor barbeque.  Often these festive events feature foods that are items we want to avoid when following the Smith Weight Loss and Wellness Programs - creamy mayonnaise based potato salads and coleslaw, hotdogs and hamburgers on buns, pies or shortcake for dessert.  Since most of these gatherings are potluck I have developed a few recipes that I like to bring which are tasty and healthy. One of my favorites is my version of an Asian influenced coleslaw. It's a big hit at parties and can be paired with a piece of grilled chicken for a delicious meal.

Combine in a large bowl:

Shredded half a white cabbage and half a purple cabbage

2-3 carrots cut into matchstick sizes

One bunch cilantro, stems and leaves finely chopped

1/2 cup dry roasted peanuts

In a small bowl whisk together juice from 2 lemons, 1/4 cup rice vinegar, 1/4 tsp sesame oil and 1/4 tsp Kosher salt. Add a drizzle of honey and a splash of hot sauce such as Sriracha.  Slowly whisk in 1/2 cup of extra-virgin olive oil.  Pour dressing over salad, tossing well so that cabbage is evenly coated.  I like to chill this for an hour and toss again just before serving.
